Here's a tricky one. On my site, I use tags for show performers, and organizer for show hosts. Now, the same people in this town both perform and host. I'd like their tag & organizer pages to include lists of both types of shows. Essentially, I want to use [aec_organizer] on the Tag page and [aec_tag] on the Organizer page.

For ID relation, both tags and organizers have matching slugs. Is there a way to pull from the dynamic page slug to make this work? Or is the fact that Tags are taxonomy and Organizers are custom meta fields making this impossible?

It's a good idea to have [aec_organizer] on the Tag page and [aec_tag] on the Organizer page. But, both the shortcodes look for a different query var. I mean [aec_tag] get slug input from "?aec_tag=" whereas [aec_organizer] gets from "?aec_organizer=". So, either you will need to alter your URL or customise these shortcode functions to use one of the query var.
